Sweet Heart

Many years ago I worked at a bakery in Portland that made these delicious jam-filled buttermilk biscuits. Jammers are the perfect comfort food for any time of day, and with the help of a heart-shaped cookie cutter they also make the perfect Valentine.

2 cups AP Flour

2 tsp sugar

1 tsp sea salt

2 tsp baking powder

1/2 tsp baking soda

5 tbsp cold unsalted butter or shortening, cut into pieces

3/4 cup buttermilk

1/3 cup jam, pick your flavor

Preheat oven to 450 degrees.  Lightly grease or line a sheet pan with Silpat.  Whisk together the flour, sugar, baking powder, and baking soda. Using a pastry cutter or two knives, break apart the butter/shortening until it is coated and pea-sized.  Add the buttermilk and combine. Time to get your hands dirty.  Knead until fully combined, fairly smooth.  Roll out into a 1/2" deep slab.  Using a heart shaped cookie cutter, cut biscuits and lay them on the sheet pan.  Scoop 3 measured teaspoons of jam onto the biscuit and shape into a heart.  Bake for 8-10 minutes until light golden brown. Let them cool for a few minutes to allow the jam to set, and enjoy!
